Hearty Beef & Bean Chili
Ingredients
• 1½ lbs ground beef
• 2 cups cooked dry beans (pinto, kidney, or a blend)
• 1 medium onion, diced
• 3 cloves garlic, minced
• 1 (28 oz) can crushed tomatoes
• 2 tbsp tomato paste
• 1½ cups beef broth or bone broth
• 2 tbsp chili powder
• 1 tsp ground cumin
• 1 tsp smoked paprika
• ½ tsp dried oregano
• Salt and black pepper, to taste
• 1–2 tbsp olive oil or beef tallow
• Optional toppings: sour cream, shredded cheese, green onions, fresh herbs
Directions
1 Heat oil or tallow in a large pot over medium heat. Add onion and cook until softened.
2 Add garlic and cook briefly until fragrant.
3 Add ground beef and cook until browned.
4 Stir in tomato paste and spices; cook briefly to bloom flavors.
5 Add tomatoes, beans, and broth. Stir well.
6 Simmer uncovered 30–45 minutes, stirring occasionally.
7 Season to taste and adjust thickness as needed.
8 Serve warm with optional toppings.
