caramel pecan cookies

Caramel Chip Pecan Cookies

INGREDIENTS

  • 2 C + 2 Tbsp Garbanzo flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp salt
  • ¾ C butter, melted
  • ¾ C packed brown sugar
  • 1/2 C granulated sugar
  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 10 oz caramel chips
  • ¾ C pecans, chopped

DIRECTIONS

1.  Preheat oven to 350 degrees, grease or line cookie sheet with parchment paper.

2.  In large bowl, whisk flour, baking soda and powder, and salt.

3.  In small bowl, combine butter and sugars until blended. Add egg and yolk, vanilla.

4.  Blend in dry ingredients, then add chips and pecans mixing thoroughly.

5.  Roll 2 tbsp of dough into a ball. Place on cookie sheet 2 inches apart. Bake 12-14 min until cookies are golden brown.
